Cliff Note: I like my food fresh
You've seen the posts – bowls of a whole week of vegetables, macros, occasional meat from your bodybuilding buds. Now with the New Year, we're seeing more and more of this – even in the vegan community. When it started gaining popularity about a couple of years ago – I was amazed. Cook your food – pop it in the fridge, then forget it…until it was time to eat.
I got caught up in the bodybuilding world – I miss it now as I sit here with my looser stomach. I did the cool exercises, had a plan when I went to the gym, had a trusty shake and had a proper meal plan. Paleo was my poison then I started incorporating more grains because, heck, I missed them. Next thing you know I had bought a couple of containers from varying stores and I too started meal prepping on the weekends. Besides, it really did save time.
I did it one week – it was alright. Then I did it another…then another… and it got OLD really quick. Apparently, my taste buds gave me up and tattled to my brain, “You know you don't like this Fati,”. My mouth wanted fresh food, not 4-day old food. I've come to realize that the most I could handle were over 1 to 2-day old vegetables and meats. Rice was the exception – I could make that in advance without any issues but then again it takes less than 15 mins to make.
With that said, here are a few dishes you can prep in advance if you want to meal prep:
Boiled Rice
Save the frying for the day before or when you're ready to use it
Pancakes/Waffles
Great for freezing
Soups
Great for freezing
Bagged Fruit
Pop in the freezer and eat or blend into a smoothie
Baked Casseroles
Day 3 old lasagna or lentil loaf isn't so bad after all
Boiled Pasta + Marinara
A bowl of spaghetti and marinara can hold you down for a good week. Save the toppings for after you've heated it
