Vegan Koki Recipe - A Delicious Cameroonian Dish

This Koki Recipe is sure to be your go-to weekend breakfast Koki is a steamed bean cake usually made with either peeled honey beans or black-eyed peas. For those familiar with moi moi, the Nigerian version does not deviate too far from the Cameroon version. The biggest difference is the addition of palm oil, cocoyam leaves (or in our case spinach leaves), and the way it is wrapped prior to steaming. When I first experienced koki, I was visiting my good friend Feh, my Cameroonian older sister. I call it an experience because of the presentation. When served koki, I was amazed by the spherical base and the narrow top. This koki recipe is sure to pique anyone's ...

Fried Vegan BBQ Cauliflower with Creamy Polenta & Mushroom Au Jus

Fried vegan bbq cauliflower is the perfect compliment to this comfort dish Polenta is a popular dish in my household, and if you ever take me to brunch, just make sure polenta is on the menu because that too is my go-to (before switching over to plant-based, I used to get the Truffle Polenta dish at Lido NY… great times). Polenta is the perfect base for a light meal, especially when you are going for a creamy and savory dish. I’ve paired this dish with varying sizes of fried cauliflower, to provide a crunchy texture to the smooth taste of the polenta. The au jus is the perfect topping. I hope you enjoy this comfort dish! Leave a comment below if you intend to or have tried this ...

The Zobo Maple syrup has a similar effect, yet just as easy, if not easier. 🌺 The World Loves Zobo Zobo is a popular West African drink also named after the plant that is used to create a rich red drink. Zobo in English means hibiscus and in different parts of the world, it has many names. In Jamaica and parts of the Caribbean, it is called sorrel. Easy One-Pot Vegan Nigerian Asaro - Yam Porridge

Vegan Nigerian Asaro in 30 minutes Ingredients Tools Yam is a big part of Nigerian identity, in fact, Nigeria is a top producer of Yams in the global market. With that said, Nigeria uses yam to create so many different ingredients. Yam is a starchy vegetable. Fun fact, my grandfather on my Dad's side used to trade yam back in Nigeria when he was growing up. Asaro is one of my favorite dishes. I love eating this for breakfast, but asaro has no time limit. This dish is a popular dish at big parties like weddings and older birthday parties. Vegan Nigerian Asaro is easy to make, the main thing you're avoiding is the use of crayfish and beef maggie cube. Asaro is also called ...

Protein Packed Antioxidant Smoothie

When I think back at my first smoothie - I think back to the era of Jamba Juice, is it still a thing? Not sure, but during my high school and college years, they had so many options and ways that you can build up your smoothies. Jamba Juice made things that you could not just create at home. They had these high powered blender that can clearly slice and mush anything that comes its way. Up to recently, I associated smoothies to specialty stores or at the mall. But fast forward to recently, I too have been able to pool money into a high powered machine. My Vitamix, has allowed me to whip up almost anything from sauces, to dressing, ice-cream and you guessed it - smoothies.    My mom ...

Vegan Mangú

Growing up in the Bronx I was surrounded by so many different cultures. I grew up in a pretty traditional Nigerian home, foods and customs traditional to how my parents grew up while at home. This is no exception for many immigrant children like me growing up. So when I'd leave the comfort of my home and gel with the customs of others, whether it be school, work, or events, I got to experience foods and witness traditions and dressing - all because I lived in the melting pot of New York City. Just like other boroughs, The Bronx has very distinct groups that come in and settle into different pockets around the city. It's like the first person in that neighborhood - holds down the forth ...
