Watermelon Salad with Just Lime and Mint
It is officially summer in New York City and I can not get enough watermelon. Watermelon is one of the best fruits to enjoy on a hot humid day, especially when chilled. Last week I had my first house guest since Covid-19 hit. I wanted to serve a snack that would leave my guest resonating with the experience she had at my home.

With me being a version of my mother, I took a look at my apartment and kicked into super cleaning mode. if you ever want to look at you space from a different view - take a picture and you'll be able to see things that you tend to ignore on a day to day.
The idea of making a watermelon salad came about rather randomly - after cleaning the apartment I decided to go on a walk to take in the New York City streets. There were so many people out, kids playing, music blasting, energy flowing - then I came about a watermelon stand on a corner near my house.
I had a tote with me but I had already gone to a local supermarket to buy some mint for would be used for a summer roll. The stand had quartered and whole watermelon for sale. With some shuffling, I was able to carry the watermelon home in my tote.
Why Lime?
Lime helps bring out the flavors of the watermelon, when you squeeze lime over your watermelon, the sweetness of your watermelon really jumps out. I recommend that you chill your watermelon salad before serving to get the flavors to marry together.
Are You A Seeded Watermelon Person?
With seedless watermelon becoming more and more ubiquitous, I put more effort into searching and purchasing a seeded watermelon. Seeded watermelons are usually much sweeter than seedless, and for those who like to swallow the seeds - they are good sources of magnesium, phosphorus, copper, and zinc and also contain B vitamins, essential fatty acids, and amino acids.

Ingredients
Half a large watermelon
Fresh lime juice from 1 Lime
½ cup of torn fresh mint leaves
Directions
- Slice and dice your watermelon to remove the rind, place into bowl
- Toss in lime and mint into your bowl with watermelon and mix

- Chill your salad before serving so that the flavors can infuse together
