Back again with another green plantain dish - tostones! Tostones is a very easy twice fried plantain snack. When I tried the paleo diet back in 2015, I used to eat green plantains many different ways to fulfill my carbohydrate needs without the gluten. I wouldn't say tostones is the healthiest option but it hits the spot if you want to compare it to french fries.
As a Bronx native, tostones is not foreign to me. Bronx has a high population of Dominicans and Puerto Ricans, with totstones being a staple dish. Its an option at any local Chinese store, and a common appetizer at any caribe restaurant you visit. I'm picky with my tostones because:
- The chef doesn't flatten the plantain thin enough
- The tostone is already cool before it gets to me
- It's not seasoned well enough
I have an issue with cold food, it is likely the reason why I rush to finish my food. Guilty confession - I've taken a taxi home ($) to make sure that the fries within my fast food meal doesn't get cold before I could enjoy it.
Making this dish is pretty quick and fool proof, cut, fry, smash, fry, enjoy. I use a mason jar to smash the plantain and I really put my weight into it to get the thinnest disk.

- 1 Large Green Plantain
- 1 Cup of vegetable oil
- Salt and garlic powder to taste
- Heat oil in skillet on medium heat
- Cut both ends of plantains and peel off green skin
- Cut plantain into 7-9 pieces
- Add plantains to oil and let fry for 1-2 minutes on each side or until it starts to yellow
- Remove plantains and use the bottom of a wide cup or plate to squish the plantain flat
- Add the flattened plantains back into oil and let fry 1-2 minutes on each side or until golden
- Remove from heat and sprinkle with salt to taste, add garlic or onion powder for added flavor
