Fold leaves for Nigeria's equivalent of pasteles For many Nigerian expats abroad, moi moi leaf food wasn't a thing because of the difficulty of finding the special moi moi leaf. The leaf is called uma and is native to West African rainforests. The leaf is used mainly for moi moi as it produces a sweet taste to whatever its being cooked in it. I personally don't see an issue with Banana leaf. I prefer it over steaming it in a bag or within an aluminum tin. I'm big on Nigerian cooking and would love to share with you the way I fold my moi moi. Moi moi can be tedious because it requires peeling beans. My favorite beans are honey beans or black eye beans. But a recipe for that will soon ...

Budgeting Made Easy: The Loose Budget
Budgeting does not have to be so hard Budgeting is hard, period. I know this because I've used multiple apps, and spreadsheet so that I can get my life together. Unfortunately I've never really stuck to them except for You Need A Budget (more on this another time). It wasn't up until recently did I establish a new flow - separate and spend wisely. Separate and Spend? Yes - you separate your money from the standard monthly payments like bills and obligations from your fun money or slightly variable costs. Now this is best for people who likely do not own a home, because you never really know what's going to break that month. Probably not best for people with children, as we don't know ...
NYC Preferential Rent, Does Not Really Mean Rent Stabilized
I fell into the trap of a greedy landlord with preferential rent, here is my story: 2016 I felt it was my best year. I was 26, and I felt like I had a lot going for myself. I've saved up a substantial amount with the hopes of buying a home, I had paid off a lot of my debt, I decided to apply to grad schools. I had also put my foot down and have started expressing myself more in relationships (it worked). Most importantly, I was able to move forward with my plans of buying a home only to shift the approach and rent instead. New York City apartment search is never fun, I had a strict budget with goals to move out by July 2016. I searched high and low on StreetEasy, HotPad, and many ...
Vegan No Meat Nigerian Efo Riro
Substitute Mushrooms for this Epic Vegan Efo Riro Growing up my favorite stew was efo riro, that’s stirred spinach for an exact Yoruba to English translation. My favorites were made by my mom and my faux aunt, Mummy Hamed. Mummy Hamed made the most succulent of efos. At the mosque or at a party, if she was making it, I was surely grabbing a dish. This vegan efo riro has been updated to bring me back to those days. The Process Cooking efo riro was never an issue for me, my mom made sure I knew my way around the kitchen by the age of 10 or maybe earlier. She made me watch and assist her as I was her mini sous chef. Efo riro cannot be rushed, in fact, the longer you allow ...
Dominican Tostones - Smashed Green Plantain
Back again with another green plantain dish - tostones! Tostones is a very easy twice fried plantain snack. When I tried the paleo diet back in 2015, I used to eat green plantains many different ways to fulfill my carbohydrate needs without the gluten. I wouldn't say tostones is the healthiest option but it hits the spot if you want to compare it to french fries. As a Bronx native, tostones is not foreign to me. Bronx has a high population of Dominicans and Puerto Ricans, with totstones being a staple dish. Its an option at any local Chinese store, and a common appetizer at any caribe restaurant you visit. I'm picky with my tostones because: The chef doesn't flatten the plantain thin ...
