A slight change to the Traditional Liberian dish with affordability Okra is a common dish in West Africa - actually perhaps all of Africa and even Asia. However I wanted to come to you with a recipe I've come to pick up on since beginning to date a Liberian. I first had this dish when I went over to meet my boyfriends mum over in Iowa - and boy was I in love! I love it so much I watched her create the dish and wrote out the recipe. Growing up okra soup was a simple steamed pot of blended okra. This is usually eaten with a swallow or fufu. However this dish will liven up as a sort of gumbo as you can add mushrooms, peppers and more. She loves to use fresh okra chopped into bits of 4's. ...

Vegan No Meat Nigerian Efo Riro
Substitute Mushrooms for this Epic Vegan Efo Riro Growing up my favorite stew was efo riro, that’s stirred spinach for an exact Yoruba to English translation. My favorites were made by my mom and my faux aunt, Mummy Hamed. Mummy Hamed made the most succulent of efos. At the mosque or at a party, if she was making it, I was surely grabbing a dish. This vegan efo riro has been updated to bring me back to those days. The Process Cooking efo riro was never an issue for me, my mom made sure I knew my way around the kitchen by the age of 10 or maybe earlier. She made me watch and assist her as I was her mini sous chef. Efo riro cannot be rushed, in fact, the longer you allow ...
Lemon-Cilantro Infused Black Beans Over Rice

When I first had Chipotle – probably in 2011 (late bird – I know) the flavors of the rice, the beans, the salsa. Cue – happy dance. I've stopped eating at Chipotle but instead reached for the already made black beans in the Goya cans. This satisfied me ...
Teriyaki Rapini
Soo apparently broccolini is also known as rapini! R-A-PEEE-NI. I just feel so fancy saying it that's all, but who can’t help feeling fancy eating FANCY broccoli. Like HELLO? Broccoli rabe is one of those veggies I didn’t get to experience until much later in my life – usually, I’d see it on television on cooking completions or as part of an entrée on a restaurant menu. When I first tried it – it tasted bitter, but mellow at the same time? Rabe is naturally bitter, that’s why I cooked it separate from the base and created a teriyaki sauce that’s sweet and balances out the taste. Speaking of teriyaki, did you know that you could make your own? Literally, soy sauce is the ...
